Quick Pickled Daikon

Easy to prepare pickled daikon radish. A standard side dish for most Japanese meals. Keeps in refrigerator for two weeks.
Ingredients
- 11/2 cups grated daikon radish
- 1 teaspoon salt
- 1 tablespoon rice vinegar
- Black pepper
- Splash of sesame oil is optional
Instructions
- Mix grated daikon with salt in mixing bowl
- Let rest in refrigerator for 30 minutes (covered)
- Drain and rinse and remove as much salt and water as possible
- Mix with remaining ingredients
- Refrigerate for 8 hours or more
- Enjoy
