Parsley Salad

This is really good with roast chicken and it makes a great side for fish or scallops.
Ingredients
- 3 bunches parsley
- ½ c chopped walnuts
- ½ c grated Parmesan cheese
- ¼ c finely diced red onion
- 1/2 c raisins, plumped
- ½ c extra virgin olive oil
- Juice of one lemon
Instructions
- Chop parsley in food processor.
- Mix together with remaining ingredients.
- Adjust olive oil and lemon juice to taste.
