The organic mushroom seasonings, soups, coffee and powders from Davidson Exotics have been very popular and are selling quickly. This week we are happy to introduce both dried porcini and dried morel mushrooms. You can add the dried mushrooms directly to a dish and allow them to reconstitute as the dish cooks. Alternatively, soak the dried mushrooms for 15-20 minutes in warm water, wine or stock to cover. Drain the mushrooms and use, and be sure to reserve the flavorful soaking liquid for use in stocks, soups or sauces.
Our line-up of certified organic mushroom powders have been well received. This includes Lion’s Mane that protects against dementia, provides focus and nerve health; Reishi, which can can be used as a powerful antioxidant, supports recovery from mental stress and provides resilience following physical stress; Turkey Tail, which supports a strong and healthy immune system and promotes digestive health; and a variety of blends, including Forage Blend which contains Porcini, Chanterelle, Morel, Matsutake and Wood Ear.
The ways to use these mushroom powders are limitless, but here are a few ideas — add a few pinches to the mix the next time you make granola, or toss with vegetables just before roasting. Use a teaspoon of powder in hot or cold coffee or add it to your favorite juice or smoothie. Make a dry rub for meat, poultry, or fish. Mix a compound butter with mushroom powder, coarse salt, and chopped herbs. Steep mushroom powder for a broth that tastes flavorful fast, or add it to sauces, soups, beans, greens, and baked goods — really, anything in which you want a little more oomph.
